I think Jodie was the better choice for Starling, so I'm glad Pfeiffer turned it down.
Bette woulda been great in Sister Act, though, not that Whoopi was bad. The funny part about that one is that I really don't think Bette cared about the money. People that rich and famous are already at the point where a few million extra bucks just isn't worth the hassle.
Or, how about Angela Lansbury (and every other middle-aged actress in Hollywood), who turned down the Louise Fletcher role in One Flew Over the Cuckoo's Nest?
Lansbury turned that down-she would have been fantastic (any doubters should take a look at The Manchurian Candidate). Hard to believe the three-time Oscar loser (not to mention 18-time loser at the Emmys), could have received an Oscar-winning role.
Can you fucking blame Natalie Wood?! I mean, Warren Beatty was driving her crazy. Literally! Having sex with Warren Beatty was ruining her mind. Splendor in the Grass '61. Bonnie and Clyde '67. That's not enough time to recover, man.
He's brutal. Always casting women he's sleeping with and then sabotaging the relationship that way. He's not an asshole. He's a masochist. Annette changed all that, didn't she? Fucking bitch. I would give anything to nail Warren Beatty circa '61. ANYTHING!
The Ghost role was written for Midler, too, and when she opted not to do it, she actually suggested that it be re-written for Whoopi. Check out the big coattails on Bette!

Of course there's always George Raft, who turned down High Sierra, Casablanca, The Maltese Falcon, and Double Indemnity.
